Gingerbread Men Cookies from Lois Uhl 3 C. flour, 1 tsp. Cinnamon, 2 tsp. Ginger, 1 tsp. Ground Nutmeg, 1/4 tsp. Salt, 1 tsp. Salt Mix all together. Set aside. 3/4 C. Butter softened & 3/4 C. Sugar. Beat butter and sugar with mixer on medium speed until light and fluffy. Add 1/2 C. Molasses, 1 egg, and 1 tsp vanilla; mix well. On low speed add flour mixture to butter & sugar mixture slowly until well mixed. Press dough into a disc shape, wrap with plastic wrap, and refrigerate for at least 4 hrs or overnight. Roll dough out into 1/4 inch thickness on a lightly floured surface. With a gingerbread man cookie cutter (5 ") cut out men. Place 1 inch apart on ungreased cookie sheets or parchment lined. Bake in a preheated oven @ 350* for 8 to 10 minutes or until edges are just beginning to brown. Cool on baking sheets for 2 minutes. Remove to wire racks, let cool completely. Decorate as you want. I like to pipe on white frosting for eyes, mouth & trim for sleeves, pants, buttons. Can use candies to decorate with. MAKES about 2 Doz.
